Apple cinnamon muffins


Ingredients for muffin:

  • 1/2 cup salted butter
  • 1 and 1/4 cup sugar
  • 2 eggs
  • 1 and 1/2 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 cups of flour
  • 1/2 cup of milk
  • 5 peeled apples
  • 2 Tablespoon granulated sugar
  • 1/2 Tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 Tablespoon water

Ingredients for icing

  • 1 cup confectioners sugar
  • 1 tablespoon heavy whipping cream

Directions for muffins:

  1. Preheat oven to 375F on convection setting
  2. Cream together for ten mins
    • 1 1/4 cup sugar
    • 1/2 cup butter
  3. Add the eggs, one at a time. Then add 1 and 1/2 teaspoon of vanilla.
  4. In a separate bowl combine
    • 1/2 teaspoon salt
    • 2 teaspoon baking powder
    • 2 cups flour
  5. Once combined add the dry ingredients to the cream mixture alternating with 1/2 cup milk.
  6. Set aside
  7. In a separate mixing bowl add
    • peeled diced apples
    • 2T sugar
    • 1/2T cinnamon
    • 1/4t nutmeg
    • 1T water
  8. Gently fold the cinnamon apples into the muffin mix.
  9. Fill cupcake liner with muffin mixture about 2/3 full.
  10. Bake for 19 minutes

Directions for frosting:

  1. In a stand mixer whisk together
    • 1 cup confectioners sugar
    • 1 t vanilla
    • 5 T heavy whipping cream
