
Ingredients for muffin:
- 1/2 cup salted butter
- 1 and 1/4 cup sugar
- 2 eggs
- 1 and 1/2 teaspoon vanilla
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 cups of flour
- 1/2 cup of milk
- 5 peeled apples
- 2 Tablespoon granulated sugar
- 1/2 Tablespoon cinnamon
- 1/4 teaspoon nutmeg
- 1 Tablespoon water
Ingredients for icing
- 1 cup confectioners sugar
- 1 tablespoon heavy whipping cream
Directions for muffins:
- Preheat oven to 375F on convection setting
- Cream together for ten mins
- 1 1/4 cup sugar
- 1/2 cup butter
- Add the eggs, one at a time. Then add 1 and 1/2 teaspoon of vanilla.
- In a separate bowl combine
- 1/2 teaspoon salt
- 2 teaspoon baking powder
- 2 cups flour
- Once combined add the dry ingredients to the cream mixture alternating with 1/2 cup milk.
- Set aside
- In a separate mixing bowl add
- peeled diced apples
- 2T sugar
- 1/2T cinnamon
- 1/4t nutmeg
- 1T water
- Gently fold the cinnamon apples into the muffin mix.
- Fill cupcake liner with muffin mixture about 2/3 full.
- Bake for 19 minutes
Directions for frosting:
- In a stand mixer whisk together
- 1 cup confectioners sugar
- 1 t vanilla
- 5 T heavy whipping cream
